What links Filippo Brunelleschi’s magnificent dome to this traditional Tuscan dish? As we will delve into the origins of Peposo, we will be transported back to the 15th century, a period marked by artistic fervor and culinary innovation in Florence. Legend has it that the dish was first conceived for workers laboring on the construction of the magnificent dome of the Florence Cathedral, designed by none other than Brunelleschi himself .

Picture yourself amidst the bustling workshops and construction sites, where artisans toiled tirelessly under the scorching Tuscan sun. These workers needed a simple and nourishing dish to sustain them during long days of labor, and thus, Peposo was born.

  • Beef chuck or shank or stewing beef 3 lbs
  • Red Wine (Preferable Chianti Wine) half a liter
  • Beef Broth: half a liter
  • Tomato paste (concentrate)
  • Black Pepper in powder and grains
  • Garlic: 4 cloves
  • Extra Virgin Olive Oil
  • Bay leaves
  • Rosemary
  • Salt
